Citrus fruit; winter’s little gems. They don’t look like much from the outside, but tear though their peels and you’re left with bright and sunny pieces of sweet and juicy flesh. They add a little burst of brightness to any freezing cold winter day. This almond granola is infused with flavor by packing it chock-full of little hunks of toasty almonds and adding a touch of almond extract for a little extra punch of almond goodness. I love how the flavor of the granola comes together with the subtle hints of warm winter cinnamon, cloves and cardamom spices and the sweet citrus. Not to mention the legit crunch of the granola with the soft citrus flesh and creamy yogurt is a texture lovers dream.
Almond Granola Variations and Substitutions:
- Use any combo of nuts and seeds in the granola. Just be sure to use the same ratios.
- I like using honey in this granola for this specific recipe, but maple syrup works great too.
- Toss in some dried fruit, like apples, blueberries cherries or cranberries, at the end for a little extra sweetness.
- Want more clusters? Gently press the granola down into an even layer on your baking sheet, don’t stir the granola while it’s baking and let it cool completely before breaking it into clumps. Watch closely so the edges don’t burn. The granola should just be lightly golden over the top.
Breakfast Bowl Variations and Substitutions
This recipe can easily be tweaked to accommodate your breakfast or snack preferences.
- Here is a great tutorial on how to cut citrus fruit. However, if this is out of your realm of comfort, instead of using segmented pith free wedges or disks, just peel the citrus as you normally would and add segments to your breakfast bowl (this is if you don’t mind eating the membrane).
- Use your fav fruit in place of the honey spice laced citrus. Bananas, mango, berries, whatever you’d like!
- Serve granola with yogurt or milk of your choice and fruit of your choice.
- Enjoy it as is for a fast and easy snack!

Ingredients
Granola:
1/4 c. EVOO
3 Tbsp. honey
1 tsp. almond extract (or vanilla)
1 tsp. ground cinnamon
1/4 tsp. salt
1/4 tsp. ground red pepper, optional
2 c. old-fashioned rolled oats
1 c. whole raw almonds, roughly chopped
3/4 c. unsweetened coconut flakes (I like the large flake variety)
2 Tbsp. millet
2 Tbsp. raw sunflower seeds
2 Tbsp. raw pepitas (pumpkin seeds)
1 egg white
Citrus:
2 Grapefruit, peeled and sliced or segmented
2 Naval Oranges, peeled and sliced or segmented
2 Blood oranges, peeled and sliced or segmented
1/4 c. water
1/4 c. honey
4 cardamom pods
4 whole cloves
1 cinnamon stick
Instructions
Directions:
Preheat oven to 325 degrees. In a large bowl, mix EVOO, honey, almond extract, cinnamon, salt and ground red pepper, if using. Add the oats, almonds, coconut, millet, sunflower seeds and pepitas. Whisk the egg white in a small bowl until foamy and frothy. Pour over oat mixture and stir to combine. Transfer to a large parchment lined, rimmed baking sheet and spread until you have an even layer. Bake for 30 to 40 minutes until golden brown, stirring every 10 minutes and rotating halfway through. Let cool completely before enjoying.
To prepare the citrus, using a sharp knife (important), remove peel and white pith from the citrus and discard. Slice the fruit crosswise into ¼”-thick rounds. Alternately, you can segment the fruit by slicing between the membranes, only cutting until you reach the middle of the fruit (do not cut all the way through); repeat on the other side of the segment to release the wedge of fruit flesh. Continue with the remaining segments.
Combine citrus fruit, water, honey, cardamom, cloves and cinnamon in a medium bowl. Cover and place in fridge overnight so flavors can develop. Serve over plain greek yogurt.
Notes
Granola will keep in an airtight container for 2 weeks.
