Think rice krispie treat meets granola bar. Swap out the the marshmallows and butter for brown rice syrup and EVOO, throw in some almond butter and chock it full with puffed whole grain cereals, almonds, cherries and coconut, and you’ve got yourself a very tasty and satisfying snack. Pack them for lunches, take them on road trips or serve them up for movie night – they will not disappoint.
These bars are extremely modifiable. The variations are endless!
- Use any nut or seed – pecans, walnuts, pistachios, cashews, pumpkin seeds, sesame or sunflower seeds
- Instead of flaxseed, use hemp seeds or chia seeds.
- Sub in any dried fruit – apples, pineapple, figs, cranberries or raisins.
- For more of a granola bar effect, use rolled oats in place of some of the puffed cereal.
- There are all kinds of puffed grains, but they may be hard to find. Puffed rice, puffed wheat, puffed amaranth are a few available options.
- Use any nut or seed butter – peanut butter, cashew butter, sunflower butter or tahini.
- Honey is an optional sweetener to help bind and provide moisture for a chewy texture.
- Throw in cocoa nibs, pretzels, dark chocolate chunks, cinnamon, other warm spices or anything your heart desires!
The chocolate drizzle is optional in this recipe. Honestly, the bars are so delicious on there own they really don’t need it. However, if you’re in the mood for a little something extra, a drizzle of chocolate is never a bad idea.

Description
These chewy, no-bake bars are a great for packed lunches, on-the-go or road trip snacks, or for a lightly sweetened treat. So easy, fast and so delicious!
Ingredients
1 1/2 c. puffed millet
1 1/2 c. puffed kamut
1 Tbsp. ground flaxseed
3/4 c. dried sour cherries, roughly chopped
3/4 c. toasted coconut
3/4 c. chopped toasted almonds
1/2 c. almond butter
1/2 c. brown rice syrup
2 Tbsp. EVOO
1/2 tsp. salt
1 oz. semisweet chocolate, optional
Instructions
Line a 8×8 inch baking pan with parchment paper, lightly greased with baking spray. Set aside.
In a large bowl, combine puffed millet, puffed kamut, ground flaxseed, dried cherries, coconut and almonds. Stir to evenly distribute.
In a small sauce pan, add the almond butter, brown rice syrup, EVOO and salt. Warm over medium low heat, stirring until warmed through and smooth, about 1 to 2 minutes. Do not let it get to a simmer or boil. Remove from the heat and drizzle over the dry ingredients. Stir with a large rubber spatula and fold until everything is evenly combined. Press firmly into the prepared pan with greased hands or greased spatula until you have a compacted even layer. Cover and let set for at least one hour until set and ready to cut into bars.
If desired, melt the chocolate in the microwave or over a double boiler. Immediately drizzle the warmed chocolate over the cut bars and let set until hardened.
