Oh hi! I didn’t see you there. I was too distracted looking at these thick, fudgy brownies covered in a gooey caramel coconut and pecan filling slathered in a smooth ganache topping. Can you blame me??? I mean for real though, is it hot in here?…..or is it just me?? How to Make Layered Brownies with Coconut Pecans & Ganache
First, make the brownie layer. To a bowl, add butter, chocolate and brown sugar. Microwave at 30 second intervals until the chocolate and butter are completely melted, whisking in between intervals. After the final 30 seconds whisk the mixture until it comes together and forms a smooth and glossy finish. This should take about a minute. There may still be some sugar granules that remain after stirring, which is completely fine. Next add the eggs one at a time, whisking until fully incorporated. Stir in oil and vanilla. Lastly, fold in the flour, cocoa powder and salt until just combined and no lumps remain, being careful not to over stir. Place in the oven and bake until toothpick comes out nearly clean.
To make the filling, add sugar, cream and butter to a saucepan. Bring to a gentle boil and cook until just thickened, which will only be for a minute or two. Stir in the shredded coconut and chopped pecans. Spread this mixture over the top of the baked brownies.
To make the ganache, add chocolate and cream to a small saucepan. Heat while stirring until the chocolate melts completely and the mixture is entirely smooth. While this is still warm, pour over the top of the coconut pecan layer. Let the brownies sit on the counter until the ganache has cooled and has set.

Ingredients
For the Brownie Layer:
2/3 c. cocoa powder
1/2 c. flour
1/4 tsp. salt
1/2 c. butter
2 oz. bittersweet chocolate
1 c. brown sugar
2 eggs, room temperature
1/4 c. canola oil
1 tsp. vanilla
For the Coconut Pecan Filling:
1/2 c. brown sugar
1/2 c. heavy cream
2 Tbsp. unsalted butter
1 1/3. coconut flakes
1 1/3. chopped pecans
1/2 tsp. vanilla
For the Ganache:
8oz bittersweet chocolate
3/4 c. heavy cream
Instructions
- Preheat oven to 350 degrees. Grease an 9×9 baking pan and line with parchment paper. Set aside.
- In a medium bowl, whisk together the cocoa powder, flour and salt. Set aside.
- In a separate medium microwave safe bowl, combine the butter, bittersweet chocolate and sugar. Microwave for 30 seconds, them remove and whisk. Repeat this process two to three more times. Whisk vigorously until smooth and glossy (sugar granules may still remain), about 1 minute.
- Allow the mixture to cool slightly. Add the eggs one at a time, whisking between each addition. Stir in the canola oil and vanilla until combined. Add in the cocoa and flour mixture and fold in just combined and no lumps remain.
- Pour the mixture into the prepared pan. Bake for 27 to 30 minutes, testing doneness by inserting a toothpick into the center.
- While the brownies bake, prepare the coconut filling. In a small saucepan, whisk together the sugar, cream, and butter. Bring to a boil over medium heat, stirring constantly at the butter melts. Once boiling, cook the mixture until it thickens and coats the back of a spoon, about 1 to 2 minutes. Remove from heat and stir in the coconut, pecans and vanilla. Spread this mixture evenly over the top of the brownies.
- To make the ganache, place chocolate and the cream in a small saucepan. While stirring constantly, warm the mixture over medium heat. Continue to stir until the chocolate is melted and is completely smooth. Pour over the top of the coconut pecan layer. Let rest until the ganache has set before cutting into them. Enjoy!
