BBQ Chicken & Kale Slaw Wraps

You guys asked for it! So I’m delivering! And if you’re unsure of what I’m talking about, I shared these BBQ chicken wraps on Insta awhile back and asked if I should share it. The response was VERY pro ‘gimme the recipe,’ so here we are!

I love a recipe that requires minimal effort. Especially when it comes to weeknights. Occasionally I don’t mind spending a little more time in kitchen after a busy day (I find cooking relaxing – not for everyone I know). But usually by the time the day is over and I’ve spent time with our animals, maybe done something active or got stuff done around the home I’m ready to really chillax before starting it all over in the morning. That’s why I’m all about finding shortcuts and quick substitutions that taste great while still honoring my health with a good dose of nutrition.

What You’ll Need for These BBQ Chicken Wraps

  • Cooked Chicken Breast – you can use leftover cooked chicken or pick up a rotisserie chicken
  • BBQ Sauce – use your fav
  • EVOO
  • Apple Cider Vinegar
  • Dijon Mustard
  • Maple Syrup
  • Red Cabbage & Kale – Feel free to use other crunchy veggies, like green cabbage, shredded carrots, or shredded broccoli
  • Pepitas
  • Sunflower Seeds
  • Large Burrito Size Tortilla Wraps – use whole grain or regular. I’m a big fan of these.

Description

These delicious, quick and eays BBQ Chicken & Kale Slaw Wraps are packed with all things crunchy and tasty. They take just 15 minutes to make – no cooking involved! Making it a great recipe for quick weeknight meals, lunches and parties! 


Ingredients

Scale

3 c. cooked, chopped or shredded chicken breast

1/2 c. BBQ sauce of your choice

4 Tbsp. EVOO

2 Tbsp. apple cider vinegar

1 tsp. dijon mustard

1 1/2 tsp. maple syrup

Pinch of salt and pepper

3 c. shredded red cabbage

1 bunch kale, thinly sliced and chopped

1/3 c. toasted pepitas

1/3 c. toasted sunflower seeds

46 large whole grain wraps


Instructions

  1. Toss the cooked chicken and BBQ sauce together in a medium bowl. Set aside.
  2. To make the slaw, whisk together the EVOO, apple cider vinegar, dijon, maple syrup and salt and pepper. Add the kale and cabbage to a bowl and pour dressing over the top. Using your hands gently massage the dressing into the kale mixture. Once the kale is softened, darkened and shiny toss in the pepitas and sunflower seeds.
  3. To assemble the wraps, divide the chicken and slaw between wraps. Carefully tuck in the sides of the wraps as you roll until everything is taught and secured inside. Secure with the toothpick if needed. Cut in half and enjoy!
