Description
These delicious, quick and eays BBQ Chicken & Kale Slaw Wraps are packed with all things crunchy and tasty. They take just 15 minutes to make – no cooking involved! Making it a great recipe for quick weeknight meals, lunches and parties!
Ingredients
3 c. cooked, chopped or shredded chicken breast
1/2 c. BBQ sauce of your choice
4 Tbsp. EVOO
2 Tbsp. apple cider vinegar
1 tsp. dijon mustard
1 1/2 tsp. maple syrup
Pinch of salt and pepper
3 c. shredded red cabbage
1 bunch kale, thinly sliced and chopped
1/3 c. toasted pepitas
1/3 c. toasted sunflower seeds
4 – 6 large whole grain wraps
Instructions
- Toss the cooked chicken and BBQ sauce together in a medium bowl. Set aside.
- To make the slaw, whisk together the EVOO, apple cider vinegar, dijon, maple syrup and salt and pepper. Add the kale and cabbage to a bowl and pour dressing over the top. Using your hands gently massage the dressing into the kale mixture. Once the kale is softened, darkened and shiny toss in the pepitas and sunflower seeds.
- To assemble the wraps, divide the chicken and slaw between wraps. Carefully tuck in the sides of the wraps as you roll until everything is taught and secured inside. Secure with the toothpick if needed. Cut in half and enjoy!
