Description
Easy Toasted Muesli with Cherries & Coconut is a nutrient dense mix of rolled oats, sunflower seeds, millet, coconut, flaxseed, dried sour cherries and warm spices. It’s so easy to throw together a large batch to have on hand for a quick breakfast or snack!
Ingredients
4 c. regular rolled oats
1 c. coconut flakes
1/2 c. sunflower seeds
1/2 c. millet
3 Tbsp. ground flaxseed
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. salt
1/2 c. dried sour cherries
For serving:
Kefir, plain yogurt, milk
Fresh fruit such as blueberries, cherries, bananas, or peaches (optional)
Honey (optional)
Instructions
- Preheat oven to 350 degrees. On a parchment lined baking sheet, combine the oats, coconut flakes, sunflower seeds, millet, flaxseed, cinnamon, ginger and salt. Bake for 10 minutes, stirring halfway through for even toasting.
- Serve right away or store in a large airtight container. Enjoy with yogurt, kefir or milk and serve with fresh fruit and honey. Enjoy!
