Description

Easy Toasted Muesli with Cherries & Coconut is a nutrient dense mix of rolled oats, sunflower seeds, millet, coconut, flaxseed, dried sour cherries and warm spices. It’s so easy to throw together a large batch to have on hand for a quick breakfast or snack!


Ingredients

Scale

4 c. regular rolled oats

1 c. coconut flakes

1/2 c. sunflower seeds

1/2 c. millet

3 Tbsp. ground flaxseed

1 tsp. ground cinnamon

1/2 tsp. ground ginger

1/4 tsp. salt

1/2 c. dried sour cherries

 

For serving:

Kefir, plain yogurt, milk

Fresh fruit such as blueberries, cherries, bananas, or peaches (optional)

Honey (optional)


Instructions

  1. Preheat oven to 350 degrees. On a parchment lined baking sheet, combine the oats, coconut flakes, sunflower seeds, millet, flaxseed, cinnamon, ginger and salt. Bake for 10 minutes, stirring halfway through for even toasting.
  2. Serve right away or store in a large airtight container. Enjoy with yogurt, kefir or milk and serve with fresh fruit and honey. Enjoy!
