Soooo, it’s almost 2021. Hallelujah!! Amirite?? It’s hard to believe this will be my last recipe post of 2020. Reflecting back and sifting through this difficult year I had some amazing memories and lots of positive accomplishments. And while this year has been absolutely soul crushing, heart breaking and full of a whirlwind of emotions, the only thing I’m feeling as the new year approaches is hope. With so many unknowns yet to come, I’m holding onto and celebrating all of the hope for the things to come. And as far as WBK goes, I’m so excited for what the future holds – more delicious recipes, the launching of something very new and exciting (more details to come :-), and growing this amazing community. Until then, I’ll be ringing in the new year with my husband, our animals, lots of bubbly of course and some delicious food.

Today I’m sharing this absolutely killer recipe that’s perfect for a new years brunch! This Everything Bagel Dutch Baby is a super fun blending of two of my fav breakfast items. A classic dutch baby is packed with everybody’s fav cult seasoning and it’s topped with classic lox and a whipped lemony and dill cream cheese…..flavor bomb. It’s perfect right out of the oven and served with all the fun fixings. Did I mention how easy this is to throw together? If you’ve never made a dutch baby before, I promise you you’ll want to keep making them. It’s so simple yet SO impressive on the table!

There’s a reason this cultish hullabaloo of a mix is so trendy. This sh*t is good on EVERYTHING. I love having this stuff on hand. So much so that a small jar doesn’t make it very far in this house. Insert this recipe. Bulk baby! Making a big batch is not only great to have around, but it’s also WAY more cost efficient. Here’s all you’ll need:

  • Poppy seeds
  • Black sesame seeds
  • White sesame seeds
  • Onion flakes
  • Garlic flakes
  • Flaky sea salt

Ingredients

Scale

For the Everything Bagel Seasoning (or sub 2 Tbsp. store-bought Everything Bagel Seasoning Mix):

1 1/2 tsp. poppy seeds

1 1/2tsp. black sesame seeds

1 1/2tsp. white sesame seeds

1 1/2 tsp. onion flakes

1 1/2 tsp. garlic flakes

1/2 tsp. flaky sea salt

 

For the Dutch Baby:

4 eggs

4 Tbsp. unsalted butter, divided

2/3 c. milk

2/3 c. white whole wheat flour

1/4 tsp. salt

 

For the Lemon Dill Whipped Cream Cheese:

3oz. cream cheese

1/2 lemon, juiced

2 tsp. lemon zest

1 1/2 tbsp. fresh dill, chopped

1/2 tsp. freshly ground pepper

 

For the Toppings:

Lox

Capers

Sliced red onion

Additional Dill

Lemon slices


Instructions

  1. Preheat oven to 425 degrees. Mix everything bagel ingredients together in a small bowl and set aside.
  2. In a large bowl, whisk together the eggs, 2 tablespoons melted butter, and milk until blended. Add in the flour and salt and whisk until smooth. Stir in half of the everything bagel seasoning mix into batter. Set aside.
  3. Add the remaining 2 tablespoons butter in a 10 inch cast iron pan. Place the skillet in the oven for about 5 minutes, until the butter is melted and slightly browned. Carefully remove from the oven and pour in the batter. Sprinkle the remaining everything bagel seasoning over the top. Bake for 20 minutes.
  4. Meanwhile, prepare the whipped cream cheese. In a medium bowl mix together the cream cheese, lemon juice, lemon zest, dill and pepper using a hand mixer. Mix until light and fluffy, about 2 to 3 minutes.
  5. Remove the dutch baby from the oven and serve with the Lemon Dill Whipped Cream Cheese, lox, capers, red onion and lemon slices.
