What is Romesco?
Romesco is an unforgettable sauce. It originated in Catalonia and it’s typically made with tomatoes, roasted red peppers, nuts and garlic. This recipe is a quickened up version that’s super quick and incredibly easy. And you might even have all the ingredients in your pantry as we speak!
How to Make These Roasted Cauliflower Sandwiches happen?
These sandwiches could not be easier!
- Roast the Cauliflower – Toss cauliflower steaks with EVOO and italian herbs and roast until tender and lightly browned.
- Make the Romesco – To a blender, add all the ingredients, except the olive oil, and pulse until the they’re mostly chopped and combined. While the blender is running, drizzle in the olive and and continue to blend until you reach a consistency you like. Some prefer a more chunky style while others prefer a smoother sauce.
- Assemble the Sandwiches – Layer the sauce, the roasted cauliflower, hummus, lettuce and feta between two slices of bread and voila! One tasty sandwich is ready to eat.

Ingredients
For the cauliflower:
EVOO
1 large head cauliflower, sliced into 3/4 inch slices
2 tsp. italian herb mix
Garlic
For the romesco Sauce:
1/2 c. roasted red bell peppers
1/4 c. toasted almonds
2 Tbsp. sundried tomatoes, rehydrated or packed in oil
2 tsp. sherry vinegar or red wine vinegar
1 garlic clove
1/2 tsp. smoked paprika
Pinch cayenne
Pinch salt
2 Tbsp. EVOO
For the sandwiches:
Bread
Hummus
Feta
Lettuce
Instructions
- Preheat the oven to 425. Toss cauliflower in EVOO, herb mix and garlic. Roast for 25 to 30 minutes, until tender and browned. Cooking time with vary depending on the thickness of your cauliflower steaks.
- To make the romesco, place everything but the EVOO in a blender. Pulse until the ingredients are mostly blended. While the blender is running, drizzle in the EVOO and blend until you reach your desired consistency (either just slightly chunky or completely smooth).
- To assemble the sandwiches, spread a spoonful of romesco on one slice of bread, layer with feta, roasted cauliflower, hummus, and lettuce. Top with second slice of bread. Repeat with other sandwiches. Enjoy!
