Tahini and Herb Chickpea Salad Sandwich with smashed chickpeas, tahini, dill, chives, currants and almonds is packed with delicious flavor and is perfect for a filling and easy to throw together lunch or dinner!


Ingredients

Scale

Garbanzo Bean Salad:

1 can (15oz) garbanzo beans, drained and rinsed

2 Tbsp. tahini

1 Tbsp. EVOO

3 tsp. apple cider vinegar

1/2 tsp. maple syrup

2 tsp. dijon

1/2 c. shredded carrots, about 1 medium carrot

2 Tbsp. chives, minced

2 Tbsp. dill, chopped

2 tsp. parsley, chopped

1/3 c. chopped toasted almonds

2 Tbsp. currants

For the Sandwich:

Sandwich bread, toasted optional

Lettuce leaves


Instructions

  1. Add beans to a medium bowl and lightly mash with a fork or potato masher. Stir in tahini, EVOO, apple cider vinegar, maple syrup and dijon.  Toss in shredded carrot, chives, dill, parsley, almonds and currants.  If the salad seems dry, add in more tahini and adjust seasonings as desired. (depending on the brand of garbanzo beans, some might be drier).
  2. To assemble the sandwich, top bread slices (toasted or untoasted) with lettuce and chickpea salad. Enjoy!
