Guys, its hot. And it looks like we’re set for a very hot Fourth of July weekend. So I hope your holiday plans involve some form of a patio or rooftop, a pool or body of water (kiddie pools count), a whole lotta sunblock, refreshing cocktails and frozen delicious snacks. And ohhh do I have the perfect boozy snack combo for you. These Red, White & Blue Berry Mojito Popsicles are made with a classic mojito concoction with added strawberry and blueberry mojito layers. They’re no doubt festive, boozy, perfectly refreshing for a hot summer day, and sure to knock your flip flips off!

Tips for Making Berry Mojito Popsicles

  • No time to freeze multiple layers? Either skip the berries and just freeze the classic mojito mixture for a classic mojito popsicle. Or make all strawberry mojito popsicles or all blueberry mojito popsicles. Just blend 2 cups of whichever berry (or a combo) with the classic mojito mixture. Then pour into your mold and freeze overnight.
  • Not into booze? Just leave it out for a virgin/kid friendly popsicle.
  • In order to make these, you’ll need a popsicle mold. I used this silicone mold from Amazon. It has 10 cavities and each cavity holds about a half cup liquid. So depending on the size of your mold, you may end up with more or less liquid at the end.
  • Tips for pouring liquid into popsicle molds: You could use a narrow funnel. Or to create really clean and even layers, use a baster or I used a marinade injector (sanitized of course).

Ingredients

Scale

Mint Simple Syrup (makes a little extra):

1/2 c. sugar

1/2 c. water

1/2 c. fresh mint leaves

 

For the Popsicles:

1 1/2 c. sparkling water

3/4 c. freshly squeezed lime juice

3/4 c. mint simple syrup

1/2 c. white rum

1 c. fresh blueberries

1 c. fresh strawberries

Instructions

  1. To make the mint simple syrup, combine sugar, water and mint leaves in a small saucepan.  Heat over medium heat until the sugar is completely dissolved.  Remove from the heat and allow to cool to room temperature.  Once cooled, strain out the mint leaves.
  2. In a medium bowl, combine sparkling water, lime juice, 3/4 c. mint simple syrup and rum.  Measure and set aside 1 3/4 cups of the rum mojito mixture.  This will be the middle layer.
  3. Blueberry Layer: Add half of the remaining rum mixture to a blender with the blueberries.  Blend until smooth.  Set aside.
  4. Strawberry Layer: Add the other half remaining rum mixture to a blender with strawberries.  Blend until smooth.  Place in the refrigerator until ready to use. 
  5. To make the popsicles, divide the blueberry mixture between each mold and freeze until frozen, at least 4 hours. Once frozen, remove from the freezer and divide the plain rum and lime mojito mixture between each mold and insert popsicle sticks.  Return the mold back to the freezer and freeze, about 4 hours. For the last layer, divide the strawberry mojito mixture and freeze, 4 hours or overnight.
  6. To remove the molds, briefly run the mold under hot water for a couple seconds and gently slide the popsicles out of the mold.  If using a soft silicone mold, you can help move the popsicle out of the mold by carefully pressing on the bottom of the mold. Either serve right away or wrap each popsicle in plastic and place in a freezer safe container to store in the freezer.
