Sheet Pan Caribbean Shrimp & Pineapple Tacos

Sheet Pan Caribbean Shrimp and Pineapple Tacos are sweet, savory, full of flavor and perfect for a quick weeknight meal! The spiced shrimp are stuffed into warm tortillas, paired with lightly charred pineapple and served with a roasted serrano pepper, onion and garlic green sauce. Top with crunchy cabbage, creamy avocado and cool greek yogurt or sour cream for an incredibly tasty taco Tuesday. These tacos are easy, quick and so delicious!

Sheet Pan Solution for Quick Weeknight Meals

When life gets hectic, busy or overwhelming, the idea of making a meal can feel exhausting. I totally get it. There are long days when I can’t look or even think about food by the time dinner rolls around. But on the days when I feel a good homemade meal is what my body needs and I don’t want to spend a lot of time in the kitchen, sheet pan dinners come to the rescue. Dinner doesn’t get much easier than a sheet pan dinner. Throw everything on a sheet, toss in the oven and voila! Dinner done! And if you choose to line the baking sheets with parchment paper, cleanup is a breeze! Winning all around!

Meal Prep Tips for Carribean Shrimp Tacos

These tacos come together pretty quickly, but here are some other tips to get the most out of this easy sheet pan meal:

  • Shred the cabbage the night before and store in airtight container. If you’re able to snag some in the grocery, a faster solution is to buy pre-shredded cabbage or store-bought packaged slaw.
  • Measure and mix the spices ahead of time. Or make a large batch of the spice blend to keep in the spice pantry for the next time you make these tacos or want a Caribbean flavored dish.
  • Shrimp cooks up quickly, so it’s a great protein option for a speedy meal. You could also try using sliced chicken breast or thigh. Just account for longer baking time.
  • To warm the tortillas, wrap a stack in foil and place in the oven after the pineapple and veggies are done broiling. They will warm as the oven cools down. By the time you’re ready to serve, they’ll be ready to go.

Sheet Pan Caribbean Shrimp & Pineapple Tacos are sweet, savory, flavorful & perfect for a fast weeknight meal! These tacos are easy, quick & so delicious!


Ingredients

Scale

16 oz. large shrimp, peeled and deveined

2 Tbsp. EVOO, divided

1 tsp. allspice

1 tsp. ground ginger

1 tsp. cumin

1 tsp. garlic powder

1/2 tsp. thyme

1/2 tsp. salt

1/4 tsp. cinnamon

2 c. small pineapple chunks

 

Green Sauce:

2 serranos, stem removed

1 yellow onion, cut into 8 wedges

3 cloves garlic, skin left intact

1/2 c. cilantro

1 Tbsp. coconut aminos

 

Serve With:

Tortillas, warmed

Shredded cabbage

Avocado, optional

Sour Cream or Greek Yogurt, optional

Queso fresco, optional

Limes, optional

Cilantro, optional


Instructions

Preheat oven to 425 degrees. On a parchment lined baking sheet, toss shrimp with 1 Tbsp. EVOO along with the remaining ingredients through cinnamon.  On a separate parchment lined baking sheet, toss pineapple, serrano, onion and garlic with remaining 1 Tbsp. EVOO. Bake for about 8 to 10 minutes, until the shrimp is cooked and opaque in the center.  Turn on the broiler and broil the shrimp, pineapple and veggies until lightly charred.

 

To make the green sauce, remove skin from garlic.  Option to remove seeds from serranos. In a food processor, pulse together roasted serranos, onion, garlic, cilantro and coconut aminos.

 

Serve Carribean shrimp with pineapple, green sauce, tortillas, cabbage and optional toppings. Enjoy!
