Sheet Pan Chicken Fajitas are so easy and come together in just 30 minutes! Chipotle fajita seasoned chicken, bell peppers and onions are stuffed in warm tortillas and topped with chipotle crema, creamy avocado and lime juice. They’re smokey, spicy and perfect for a speedy weeknight dinner!

Okay, get ready for some MAJOR exciting news. Ready??! So, one week from today we will be celebrating Cinco De Mayo!!! In preparation for the holiday, I’m planning on sharing several Cinco de Mayo inspired recipes! I’m talkin margs, tacos, nachos and more! And to kick off this series of recipes, I have the perfect recipe for a quick weeknight dinner, Sheet Pan Chicken Fajitas with Chipotle Crema!

So, maybe my hype was a little extra, but gotta find the joy somewhere these days, right? I’m truly looking forward to enjoying some festivities at home with one of my fav cuisines, Mexican food! From the versatility of the ingredients to the many amazing flavors, there’s so much to love about cooking and eating Mexican food!

How to Make Sheet Pan Chicken Fajitas

Technically, fajitas are more Tex Mex, and they’re traditionally made with a flaming hot cast iron skillet. But for an easy, fuss-free dinner, the sheet pan method is great for a quick meal. It requires very little prepartion and the cleanup is a breeze. These fajitas are packed with so much amazing flavor, you wouldn’t think the cooking effort is so minimal! This recipe seriously couldn’t be easier and requires just a few steps:

  • Mix fajita spices together.
  • Toss veggies and chicken with EVOO and fajita seasoning on sheet pans.
  • The chicken and veggies are then baked until the chicken is cooked through and the veggies are lightly charred.
  • Prepare Chipotle Crema while fajitas bake.
  • Remove from oven and serve with warm tortillas and optional toppings: avocado or guacamole, lime wedges, hot sauce, cilantro.

Description

Sheet Pan Chicken Fajitas are so easy and come together in just 30 minutes! Chipotle fajita seasoned chicken, bell peppers and onions are stuffed in warm tortillas and topped with chipotle crema, creamy avocado and lime juice. They’re smokey, spicy and perfect for a speedy weeknight dinner!


Ingredients

Scale

Fajita Seasoning:

2 tsp. chili powder

1 tsp. ground cumin

1 tsp. garlic powder

1 tsp. oregano

1/2 tsp. smoked paprika

1/4 tsp. chipotle powder

1/2 tsp. salt

 

Fajitas:

2 Tbsp. EVOO, divided

1 lb. chicken breast, sliced into 1/2 strips (if the breast is thick, slice those pieces in half)

3 bell peppers, cored and sliced

1 large or 2 small yellow onions, sliced

Juice of 1 lime

 

Chipotle Crema:

1 c. greek yogurt

1/2 lime, juiced

1 Tbsp. apple cider vinegar

1 tsp. honey

1/4 tsp. chipotle powder

 

Remaining Ingredients:

Tortillas, warmed

Avocado or guacamole, optional

Lime wedges, optional

Hot sauce, optional

Cilantro, optional


Instructions

  1. Preheat oven to 425 degrees.  In a small bowl, mix together the fajita seasoning ingredients, chili powder through salt.  Line two baking sheets with parchment paper. 
  2. On one baking sheet, toss together the peppers and onions with 1 tablespoon EVOO and a third of the fajita seasoning mix.  On the other sheet toss the chicken with the remaining 1 tablespoon EVOO and the remaining fajita seasoning mix, until evenly coated.  Arrange the chicken, peppers and onions in an even layer. 
  3. Transfer both sheets to the oven and bake for 20 to 25 minutes, until the chicken is cooked through and the veggies are lightly charred.
  4. To make the Chipotle Crema, stir the ingredients together in a small bowl until combined.
  5. Remove from the oven.  Toss the baked chicken with the lime juice.  Serve with chipotle crema, warm tortillas, avocado or guacamole, lime wedges, cilantro and/or hot sauce. Enjoy!
