These quick, easy & delicious Mushroom Melt Sandwiches are stuffed with fresh mushrooms, three types of gooey melted cheese & so much delicious flavor. Perfect for a tasty and super speedy lunch or dinner!

8 slices whole grain bread
8 oz. whole mushrooms, sliced (or pre-sliced)
4 oz. swiss cheese (4 slices)
4 oz. cheddar cheese (4 slices)
4 oz. provolone cheese (4 slices)
Toppings:
Lettuce
Red onion slices
Avocado slices
Giardiniera
Italian seasoning
Instructions
- Preheat oven to 450 degrees. Place all bread slices on a parchment lined baking sheet. Top half of the bread slices with mushroom slices. Then top the mushroom halves with the swiss, cheddar and provolone slices – one slice of each cheese per sandwich.
- Place in the oven and toast until cheese is melted and bread is toasted – about 5 minutes.
- Remove from oven and on the toast with the mushrooms and cheese layer on lettuce, avocado, red onion, giardiniera and italian seasoning. Finish by topping off with the remaining slices of toast. Enjoy!
