These Mushroom Melt Sandwiches are so easy and filled with amazing flavor. They’re stuffed with fresh mushrooms and three types of gooey melted cheese. And then topped with lettuce, red onion, avocado, giardiniera and Italian seasoning. Perfect for a deliciously savory and super fast lunch or dinner.

These mushroom melt sandwiches answer the call for a tasty and super fast meal when you’re in the mood for a veggie packed sandwich. They’re inspired by my absolute all-time fav sandwich from Potbelly. It’s literally the only thing I ever order from their menu, and once upon a time it was my usual go-to whenever I was in the mood for a quick and delish sandwich. It’s so perfectly tasty! Unfortunately, when I moved to Indy the nearest Potbelly was not within easy reach. Such a bummer! So I wanted to recreate a version that tasted just as good as, if not better😉, than the OG.

Ingredients for Mushroom Melt Sandwiches

One part veggie, one part spicy plus THREE parts cheesy and all parts delicious! These veggie mushroom melts will be ones you’ll want to make again and again because of how fast and easy they are! You’ll just need a few ingredients:

  • Bread
  • Mushrooms
  • Swiss
  • Cheddar
  • Provolone
  • Lettuce
  • Red onion
  • Avocado
  • Giardiniera
  • Italian seasoning

Customize Your Mushroom Melt

  • Enjoy with any cheese you’d like! I think havarti, pepperjack and mozzarella would all be amazing.
  • Not into spice? Feel free to omit the giardiniera – it will still be delicious.
  • Top with any other of your fav veggies – fresh spinach, sliced cucumbers, shredded cabbage, sprouts, or tomatoes.

How to Make the Best Mushroom Melt Sandwich

  • Stack it: Top one slice of bread with sliced mushrooms. And then top mushrooms with cheese slices.
  • Toast it: Melt it! Place the bread slices in oven and toast until melty and delicious.
  • Top it: Top your mushroom melt with veggies and all the tasty things!
  • Enjoy: Depending on your ingredients, these sandwiches can be quite filling. Add any sides to help build a satiating and satisfying meal!

Description

These quick, easy & delicious Mushroom Melt Sandwiches are stuffed with fresh mushrooms, three types of gooey melted cheese & so much delicious flavor. Perfect for a tasty and super speedy lunch or dinner!


Ingredients

Scale

8 slices whole grain bread

8 oz. whole mushrooms, sliced (or pre-sliced)

4 oz. swiss cheese (4 slices)

4 oz. cheddar cheese (4 slices)

4 oz. provolone cheese (4 slices)

Toppings:

Lettuce

Red onion slices

Avocado slices

Giardiniera 

Italian seasoning


Instructions

  1. Preheat oven to 450 degrees. Place all bread slices on a parchment lined baking sheet. Top half of the bread slices with mushroom slices. Then top the mushroom halves with the swiss, cheddar and provolone slices – one slice of each cheese per sandwich.
  2. Place in the oven and toast until cheese is melted and bread is toasted – about 5 minutes.
  3. Remove from oven and on the toast with the mushrooms and cheese layer on lettuce, avocado, red onion, giardiniera and italian seasoning. Finish by topping off with the remaining slices of toast. Enjoy!
