Are you team chicken wings or team nachos? Personally, I’m ALL about a plate full of nachos. My husband on the other hand is somewhat of a chicken wing connoisseur. It’s his traditional “lucky” game day food, so serving wings on one of the biggest sporting events of the year is not even a question. When I told him about my thoughts on making “chicken wing” meatballs, he was suspect to say the least. But when taste test day came around, sure enough his eyes went instantly wide with pleasant surprise! I have no doubt you’ll be just as thrilled with these Baked Chicken Meatballs!

The best part about these meatballs is you can easily make them with both sauces for some fun variety that will no doubt please everyone. Or, if you have a sauce preference, just double the sauce ingredients to coat all the meatballs. Honestly, one of the main reasons I chose to highlight both sauces is because both my husband and myself couldn’t choose just one! The Hot Buffalo Sauce is as perfectly classic as is sounds and it’s served with a cool Dill and Blue Cheese Dip. And the Orange Honey Sesame Sriracha Sauce is all things sticky, spicy and sweet! Both are SO GOOD!!!

1 lb. ground chicken

1/2 c. dried whole wheat bread crumbs (or regular)

1 egg

1 tsp. garlic powder

1/4 tsp. salt

1/4 tsp. pepper

For the Hot Buffalo Sauce (double if only making one sauce):

13 Tbsp. hot sauce, such as Franks Red Hot Sauce

1 Tbsp. apple cider vinegar

1 Tbsp. EVOO

2 tsp. honey

1 tsp. smoked paprika

1/2 tsp. dried thyme

1/2 tsp. garlic powder

1/2 tsp. black pepper

For the Orange Honey Sesame Sriracha Sauce (double if only making one sauce):

1/4 c. honey

24 Tbsp. sriracaha

1 Tbsp. toasted sesame oil

1 Tbsp. coconut aminos

1 orange, juiced

Zest of 1 orange

Sesame seeds, optional

For the Greek Yogurt Blue Cheese Dip:

3/4 c. greek yogurt

1/4 c. fresh dill

1/2 lemon, juiced

4 oz. blue cheese crumbles

2 Tbsp. apple cider vinegar

1 tsp. honey

1/4 tsp. garlic powder

Instructions

  1. Preheat the oven to 400 degrees. In a medium bowl, combine the chicken, bread crumbs, egg, garlic powder, salt and pepper. Using your hands mix until everything is evenly combined, being careful not to over handle. Using a 1 ounce scoop, shape into meatballs. Place them on a parchment lined baking sheet and bake for 15 to 20 minutes, or until internal temperature reaches 165 degrees. Depending on how the size of your meatballs turn out, time may vary.
  2. To make the Hot Buffalo Sauce, in a medium bowl whisk together the hot sauce, apple cider vinegar, EVOO, honey, smoked paprika, thyme, garlic powder and black pepper. Set aside.
  3. To make the Orange Honey Sesame Sriracha Sauce, add the honey, sriracha, sesame oil, coconut aminos, orange juice and zest to a small saucepan. Bring to a gentle boil over medium high heat. Reduce the heat and let simmer until it’s reduced by half and becomes slightly thickened. Remove from heat.
  4. To make the Greek Yogurt Blue Cheese Dip, stir together the greek yogurt, dill, lemon juice, blue cheese, apple cider vinegar, honey and garlic powder until combined.
  5. To the bowl with the Hot Buffalo Sauce, add half of the cooked warm chicken meatballs and toss to coat. To the bowl with Orange Honey Sesame Sriracha Sauce, add the other half of the cooked warm chicken meatballs and toss to coat.
  6. Serve the Orange Honey Sesame Sriracha Chicken Meatballs with any remaining sauce. Serve the Hot Buffalo Chicken Meatballs with the Greek Yogurt Blue Cheese Dip. Enjoy!

Notes

The best part about these meatballs is you can easily make them with both sauces for some fun variety that will no doubt please everyone. Or, if you have a sauce preference, just double the sauce’s ingredients to coat all the meatballs.

Adjust the spice level to your liking. Start by adding small amounts of the hot sauce and sriracha and gradually increase to your heat preference.
